When I started learning for my Sharepoint 2010 Administration certification, I started out using the Wrox titles. I think they're excellent and they're covering almost every aspect of Sharepoint in their range.
When you're starting out with Sharepoint you get pretty daunted with the features, configuration, etc and the first thing you need is a good testing environment to start your quest with. The big question is: How should I be able to build a GOOD test environment if I never used it before ?
Fortunately the guys at Wrox have an excellent book for this. It's called Real World SharePoint 2010: Indispensable Experiences from 22 MVP The first chapter guides you through the process of buidling your own test environment from A to Z, If you never worked with Sharepoint, this guide is a must have.
The rest of the book contains a ton of information. These chapters are not directly aimed at novice Sharepoint administrators, but I'm sure that at some point in your learning curve you will learn great stuff from it.
